Ameztoi has perfected the cod croquette, using the best fresh ingredients from their local area. The cod, which is caught in nearby coastal areas, is cooked very slow using authentic natural farmhouse milk, which is the only way to create a bechamel sauce that is home-made and very smooth. Each cod croquette is topped with a home-made grated bread, providing it with a very crunchy texture.
