Produced in Burgos in northern Spain, the process of adding rice was originally done to bulk out the sausage, but the unique flavour became very popular and adds a very unique twist and has become a signature dish.

However it is versatile enough for an experimental chef to use it with a range of dishes, from pasta to poultry, game to garnish.
