ANCHOVY FILLETS LENGTHENED WITH OLIVE OIL IN GLASS JARS The anchovy will follow a long maturation in the barrel in salt and in press for a minimum of 3 months. Once the anchovy has reached the ripening stage, with its characteristic smell, taste and colour, it enters the transformation stage. The anchovies are trimmed (cut of the belly and tail) washed and the excess brine is then removed by pressing. The anchovies are then threaded manually and the nets are stored by hand in the pots. The pots are then immersed in olive oil and then capped. No chemical or thermal treatment is involved in the preparation.
