Old Lille cheese is a Maroilles paste. Salty twice, greyish in colour with a slightly ammoniacal odour, its taste is more pronounced, saltier and a bit pungent. Its paste is soft. The Gris de Lille, formerly known as 'Maroilles gris', matures longer than its cousin: it lasts 2 months.
Vieux Lille farmer paved is a typical northern cheese. Its pronounced and salty taste finds its origin in its manufacture.
