Tomme Noire des Pyrenees is quite a mild cheese with a slightly salty tang to it, but its combination of taste and texture is so excellent that the best way of eating it is just completely on its own… other textures and flavours just mask how good the cheese is. The attractive thin black rind is inedible but peels off very easily.
