Livarot has recently become one of my very favourite of all cheeses. My preferred way of eating it is to cut a wedge with about 1.5cm rind, place onto a toasted buttered crumpet, and warm briefly (15 seconds) in a microwave… the cheese itself goes into a delicious puddle, but the rind just softens and can be picked off and eaten separately. No idea how I came up with this but it really does work and the cheese shines! Livarot fondue on crumpet!
