Description:
The bound veal juice has an excellent rehydration with boiling water and a good hold in the bain-marie. Ideal for cold bonding, it is recommended as a base of sauces (Madeira, Pepper, Hunter...), as a cooking element for wetting red and white meats and for braising vegetables.
