Le petit Sable de Wissant is a soft cheese but no less characterless, a bit like Blanche de Wissant,
local beer from the Opal Coast with which it is brushed manually.
Note that Le petit Sable de Wissant (under another name) was elected “Most fragrant cheese in the world” in 2004
by Dr Stephen White & his team, at Cranfield University in Bedfordshire in the United Kingdom.
