Description:

Produced in the Massif jurassien, the manufacture of the Comte dates back to the Middle Ages, and was used as a "guard" cheese, to anticipate winter food reserves. It is exclusively made with raw milk from French Montbeliarde or Simmental cows. Traditionally made in village cheese factories called fruit, the counties of beginning and end of season are the most promising because these are the periods when the grass is richest. Visible crystals in cheese are the mark of successful ripening.If the wheel is surrounded by a brown band, it means that the quality of the cheese is medium, while if it is surrounded by a green band, the cheese is very high quality.For three generations, the Arnaud family has been producing local cheeses according to ancestral knowledge and pays particular attention to maintaining natural practices, traditions and respect for human labor.The cheeses are regularly awarded in international competitions, thus ranking them as the most distinguished cheeses of France.
