We have selected a fresh Norwegian salmon that we cook under vacuum at low temperature to keep all its mellow. You can top it with our sauce made of sorrel, butter and cream, enhanced by a reduction of shallots, white wine and vinegar. A touch of turmeric and cayenne pepper add to this sauce. A basmati rice accompanies this recipe.
