Produced in the Jura Mountains, the production of Comte dates back to the Middle Ages, and was used as a "keeping" cheese, in order to anticipate winter food reserves. It is exclusively made with raw milk from French Montbeliarde or Simmental cows. Traditionally made in village cheese dairies called fruitières, the Comtes at the beginning and end of the season are the most promising because these are the periods when the grass is richest. The visible crystals in the cheese are a sign of successful ripening.If the wheel is surrounded by a brown band, this means that the quality of the cheese is average, while if it is surrounded by a green band, the cheese is of very high quality. For three generations, the Arnaud family has been producing local cheeses according to ancestral know-how and pays particular attention to maintaining natural practices, traditions, and respect for human work.
